So, today marks 3 weeks of 'being' vegan. I put that in inverted commas because I am doing this as part of veganuary and I am still unsure if I will be able to commit 100% to this lifestyle once February rolls around. I've been enjoying the food I've been eating, but have also found that I've had less energy - but more on that on my Veganuary round up. Today we're here to talk about food because ya girl needs some more variation, although I am a creature of habit so if I like a meal I could probably eat it for days straight. If any of you are participating in this, looking to eat a bit less meat or just want to try out new vegan recipes, here are some readers' favourites!

  1. Some really lovely recipes you've put together Gi, the buddha bowl looks and sounds incredible and I really like the sound of the sweet potato and chickpea curry. xx

  2. I could easily eat all of these, however, I really don’t think I have it in me to be a vegan. There are some great recipes and the avocado pasta I will definitely be giving a go! Xxxxxx

  3. I didn't take part in Veganuary as honestly, I didn't realise there were so many options! I think I could probably give it a go however I'm not sure how long for. Maybe I could just incorporate some of these ideas in to my weekly meals and then I would get used to it! Some of these sound yummy!

  4. There's some excellent recipe ideas here for those people who are Vegan or those who are taking part in Veganuary! I didn't take part in it but I really admire those who did, and I think some of these dishes sound really yummy! xx

  5. Thank you so much for including my recipe! This post really goes to show that there are so many delicious vegan options out there! I have discovered so many this month and I've created recipes which I'll certainly continue eating even after #veganuary is over! Vegan mac and cheese is something I've yet to try out though, perhaps I'll have a go at Nicole's favourite recipe tonight!
